I made these Healthy and GUILT FREE Free Oatmeal Banana Protein Pancakes this late morning and they were delish and so easy to make! Let me know if you try it out! -Crystal Felici BANANA PROTEIN PANCAKES Ingredients: 2 cups gluten free oats 1 tbsp baking powder 2 packets Stevia 1 pinch of salt 1/2 scoop vanilla protein powder 2 whole eggs 1 cup almond milk 1 large ripe banana 1/2 cup water *Optional: Add blueberries or your favorite fruit on top and sugar free syrup Instructions: In a high-speed blender, add all of the dry ingredients; gluten free oats, baking powder, protein powder, salt, and stevia. Blend until it forms a flour. Add the almond milk, eggs, and banana and blend on high for about another minute or so until it forms a batter, which will still be slightly lumpy. Spray a skillet with non-stick pam cooking spray and turn the fire to medium-low. Pour the batter into the skillet, forming what ever size pancake you prefer. Let cook until bubbles form, and flip to cook the other side. The recipe will make around 8 small pancakes using 1/3c batter per pancake. Serve with fresh fruit of your choice and sugar free syrup.
