I made this before. But the best is the Thai one. Boil 300 gm sugar, 420 ml water and 4 pandan leaves, just tear each leaf into half . Boil until sugar is dissolved, off fire and stand to cool. Mix 350 gm ubi kayu / tapioca flour , 100 gm rice flour, 50 gm sago flour or potato flour = 澄面粉, 560 ml santan from 1 coconut, 1/2 teaspoon of salt. Combine all to 1 bowl and take 2 bowls and divide to 2 parts. 1 while, 1 green. Pour in 1 cup of the mixed batter in the greased 9 1/2 inches tray and steam until it is set -- 1-2 mins, then pour in green colour batter and steam to set but not too long as if too long the layer will not stick together when cooked. Remember that the more the layers, it takes more time to be set !! The last 3 layer may take 3 mins to get set. After all the batter has finished, let it steam for another 15 mins. Cut when cooled !! You can make it 3 clolours, the 3rd colour is red and the top colour also red and I often add 1 more drop for the top layer to make it more prettier as the inside layers I make it pink only.
