I made up some grated horseradish today. There is a big bunch of it at the farm lease. Usually, its harvested in the Fall, but its a long time to wait for some horseradish on roast, and sandwiches. I look at the little jars in the store and think, I should just make my own. I got a couple roots dug, and we peeled and shredded it in the food processor. Once it all was shredded, and at this point not toxic fuming yet, we added the chopping blade to the processor, and my homemade apple cider vinegar. At this point, it becomes caustic to the eyes, skin of your face, etc...Which leaves me wondering, Why do we eat food that hurts us? To which the reply is, Because it tastes sooooo good! So, Joel and I have had a good cry, from the fumes, and we have a pint jar of horseradish in the fridge with a tight lid.
