I promised you a super wicked awesome weekend project, and here it is! Wilks & Wilson Gin & Tonic Sorbet Wait, What did I just say? WILKS & WILSON GIN & TONIC SORBET INGREDIENTS 2 cups W&W Gomme 1 fresh squeezed lemon 1/2 cup water Pinch kosher salt 1 1/2 cups prepared Wilks & Wilson tonic (W&W tonic and club soda) 1/4 cups fresh lime juice 1 1/2 tsp juniper berry extract (you can make your own by crushing juniper berries and adding about 3 tablespoons of water, wait an hour - then strain) 1/4 cup Nolet Gin Zest of 1 lime - grated on microplane Directions: combine Gomme, 1/2 cup water, lemon juice and salt in a bowl. Stir well. Add the prepared W&W tonic water, lime juice, and juniper extract. Stir well and put into an ice cream maker. Churn for 25 minutes. Add Nolet Gin during the last 2 minutes of churning. Add lime zest and churn for a few seconds more. Scrape into well sealed containers and freeze for at least 2 hours before serving.
