I really dont like green bean casserole, so for the past few years I have tortured my Aunt Diane, who loves a very traditional Thanksgiving meal, with various foodie versions of the dish with varied levels of success. Since I love my aunt dearly, I decided to make my own recipe this year and I have tested it on many friends who have all given it a thumbs up. (In fact I ran to the store and baked and tested it before even agreeing to bring it.) It is very classic, but also very homemade, no chemical tastes here. Here is the recipe for anyone who is interested. Homemade Classic Green Bean Casserole 1 1/2 lb frozen petite green beans 1 pint cream (heavy or heavy whipping) 6 pieces crispy bacon, chopped 1 medium onion, diced 12 oz sliced mushrooms 4 tbsp butter, divided 1/2 tsp fresh ground pepper, or 3/4 tsp canned 3 cloves garlic, pressed or finely chopped 2 tbsp flour 1/2 tsp salt (I went light on the salt because old people tend to salt all their food without tasting it first) 2 dashes dried thyme or 1 fresh sprig Seasoned bread crumbs (like Progresso) Frenchs fried onions (I tried 5 different varieties this year, including Trader Joes and these are the hands down best) I cooked my bacon in the oven on a lined baking sheet and used one non-stick frying pan, one saucepan, one casserole, one large mixing bowl and a colander for the rest. Bring 2 quarts of water to a boil, cook one package of Trader Joes Frozen Petite Green Beans (Haricot Vert) about 2-3 minutes, until vibrant green, dump in colander. Put 2 tbsp butter in frying pan and cook sliced mushroom over medium-high heat (8) until they are nicely browned on both sides, dump in colander. Put 2 tbsp butter in same frying pan, saute onions and garlic until translucent, but not browned, sprinkle flour over mixture through a seive and cook slightly. Slowly add cream and stir all together, add salt, pepper and thyme. Cook over medium heat (6) until slightly thickened, you want it to take a second before the mixture comes back together after you run your spoon through it. Put beans, bacon, and mushrooms in bowl and pour white sauce over, mix thoroughly. Pour into greased casserole and cook, covered, at 350 degrees for 25 minutes. Uncover, stir, sprinkle lightly with seasoned bread crumbs and as many fried onions as you prefer, cook, uncovered, for an additional 5 minutes. Serve. Serves 8-10 people, doubles easily.
