I receive constant emails of love about the RAW RASPBERRY JAM (made with chia seeds and dates) from The Blender Girl Cookbook. Here it is, for those of you who have missed it. Blend up in 5 minutes. chill for 30 minutes, and you have jam that looks and tastes like conventional jam without the cooking and refined sugar. SOOOO good. I love raspberries. But, you can apply this basic principle to any ripe seasonal fruit you have on hand. You just need to tweak the dates, and perhaps add a splash of lemon juice. I have made peach, apricot, fig, blackberry, blueberry jams, and they are always a hit. This will keep in the fridge for a week. But, it never lasts that long.
