I totally forgot what risotto smelled like when cooking it.....until this afternoon! Its amazing how your sense of smell can take you right back to some wonderful times. Risotto is one of the recipes / techniques I learned when first I started to learn to cook. I havent made it in probably 2-3 years. The smell brought back some very, very, fond memories of becoming something I always dreamed about....a cook! This afternoon I made a very small batch of mushroom and spinach.....and I almost forgot how. But I guess making risotto is like riding a bike..... Oh, and I didnt make it in the pressure cooker (10 min), I made it the old fashioned way! Ladle by ladle of home made stock, butter, wine, and freshly grated parmesan cheese....plenty of it!
