I tried my twist on Elizabeth Lupos cornbread recipe. Hers had no flour. I tried to half the recipe- just need a small skillet. Only 3 of us. I did use one large egg and about a quarter cup of sugar since my husband likes it sweet. Also I bought white sunflower brand cornmeal. (White or yellow shouldnt matter?) Anyway, tried mixing the egg up in the bowl, adding the rest and tried to fold more than mix. Batter was pretty lumpy when I poured it on my hot skillet. It wasnt as bad as my batch last week, but still fell apart pretty easily. Tomorrow, I may try a different one.
