I used to make Cheesy Potato Soup with Velveta Cheese, but Velveta Cheese is NOT gluten free. Therefore, I now use the following recipe... Boil diced potatoes until tender In a pot, add 2tbsp butter and diced onions. Once onions are soft, add half heavy cream and half milk, 1/2 a block of cream cheese, at least 1 cup of shredded cheese (I use the 4 cheese blend shredded from Kroger), 1/2 cup of sour cream, and a bit of garlic seasoning. Once it is all melted, add potatoes and simmer. Enjoy!
