I was fortunate to hit the Smith Island Cake mother load thanks to some dear friends. Picture one is traditional Smith Island cake from the Fishermans Inn just on the east side of the bay bridge. It is yellow cake with chocolate icing. Pictures 2 and 3 are Smith Island cake from the Globe Theater in Berlin, MD. They were given to me by John Spiker and is wife Sue. Picture 2 is Coconut Pineapple, and Pic 3 is their version of traditional. I have come to learn the cake is thin layers of yellow cake stacked and icing applied within each layer. 10 layers is the average, with each layer backed individually in its own pan. Say what you want but I am in Smith Island Cake heaven. Good night all....on carb overload in the name of culinary greatness..........
