I was in the mood for veggie soup, but did not want the hassle of a long drawn out process of making it. I bought some organic beef for soup, I bought a head of cabbage, a can of italian style diced tomatoes, a bag of frozen mixed veggies. I put enough water to cover the meat and just a little more water. I added thyme and pepper. I let the meat cook for about 15-20 minutes and then added about 1/2 head of shredded cabbage and let cook until meat was done. It did not take that long. I added the diced tomatoes and the bag of veggies and some worcheshire sauce and let simmer for about 15 more minutes. It turned out damn good. It had good flavor, a really fresh taste.
