IN ENGLISH OLLIEBOLLEN This recipe makes approx. 50 Olliebollen ¾ litre lukewarm milk (3 1/4 Cups) 750 grams flour (3 1/4 Cups) 50 grams yeast ( 5 ¾ Tablespoons) 1 large egg 15 grams salt (2 3/4 Teaspoons) 50 Grams of sugar (4 Tablespoons) 50 grams melted butter or margerine (-1/4 Cup) 100 grams washed and dried raisins (2/3 Cup) 50 grams washed and dried currants (1/3 Cup) Cooking Oil to deep fry the olliebollen Icing sugar to sprinkle on the cooked olliebollen Mix the yeast with a little of the lukewarm milk in a separate bowl Into a large mixing bowl put the flour in and make a hollow in the centre and add the Yeast, salt, sugar, egg, melted butter or margerine Stir with a wooden spoon Add the rest of the lukewarm milk Stir well and then add the raisins and currants. Cover bowl with a tea towel Let rise for 1 ½ hours in a warm place Heat your oil With great care scoop a tablespoon full of dough and place into the hot oil When golden brown turn over and cook the second side till golden brown Remove olliebollen from oil and put on paper towel to drain Sprinkle with icing sugar while olliebollen are still hot
