IRISH STEW This is so easy to cook. This is a dish which I had frequently as a child and loved it. A real winter warmer. A lot goes a long way as it doesnt take much to fill you up! If lamb is too pricy it can be made with mince. However traditionally Irish stew is made with lamb or mutton. Amounts can vary to suit you. 1-2 kg lamb ( shoulder or cheap cut) 1 large or 2 small onions. 4-5 large carrots cut into chunks 2 parsnips cut into chunks 1.5 kg potatoes cut into 1 inch chunks. 1 or 2 lamb stock cubes 1 litre water Cut meat into cubes, and brown in a pan. Add chopped onions, after 2 mins cover with water. Put on lid a simmer slowly for 45 mins or until meat is tender. Add stock cubes, stir. Add potatoes. Cook for 5 mins. Add carrots and parsnips. Cook for 20 mins or until veg is soft. Throw in some salt and pepper. Mix with a big spoon. You can add more water if you prefer more liquid. Serve in bowls. We like ours with HP sauce. Jayne.
