If you missed the show earlier, here is what Dietician Allison Childress made on the show today...both were so delicious. Peanut Butter Chocolate Quinoa Cookies 2 cups cooked quinoa 1/2 cup natural peanut butter 1/4 cup honey 1 cup rolled oats (can be pulsed in food processor or blender for finer texture) 1/4 cup flaxseed 1/2 tsp salt 1/2 cup mini chocolate chips Preheat oven to 350 degrees. Spray cookie sheet with cooking spray or line with parchment paper. In large bowl, combine quinoa, peanut butter, honey, oats, flaxseed and salt until a "cookie dough" consistency is formed. Add chocolate chips. Using a a Tablespoon measuring spoon or cookie scoop place dough on cookie sheet. Cookies can be very close together as they do not spread much. Bake for 18-20 minutes or until the bottoms are brown. Remove from oven. Using the bottom of a drinking glass, flatten the cookie balls into a "cookie" shape. Enjoy!
