If youre going to eat butter, go for the real thing.... Margarine (eg: i cant believe its not butter) is made predominantly from vegetable oil, which contains mostly polyunsaturated fat. Whilst polyunsaturated fat is essential in the diet, its naturally a liquid at room temperature and therefore has to be processed (eg: hydrogenated) to become butter like. This process damages the fats by altering their molecular structure making them far from healthy.... Saturated fat, on the other hand, is solid at room temperature and sources such as butter are actually pretty healthy in the context of a balanced nutritious diet. Recent evidence also suggests that saturated fats arent actually all that bad for us. However, that doesnt mean that eating hoards of dark chocolate, coconut oil and butter is a good thing (like many now seem to think).
