If youre looking for an easy yet decadent dessert for the holidays, this Mocha Cheesecake is for you! Serves: 16 Ingredients: 2 cups Oreo cookie crumbs 4 Tbsp melted butter 1 cup + 2 Tbsp sugar 1/8 tsp + a pinch of salt 8 ounces bittersweet chocolate, chopped and divided 1/4 cup cold strong coffee 1 Tbsp instant espresso powder 1 tsp vanilla extract 3 packages (8 ounces each) cream cheese, softened 1/4 cup unsweetened cocoa 4 large eggs Instructions: Crust: - Preheat oven to 325 F. Grease a 9-inch springform pan generously. - In a medium bowl, combine crumbs, butter, 2 Tbsp sugar, and 1/8 tsp salt. Transfer to greased pan. - Press the crumbs into an even layer that comes up side of pan slightly. Place on a rimmed baking sheet and bake for 10 minutes. Cool completely. Batter: - While crust is baking, microwave 6 ounces of chocolate in a microwave-safe bowl on high in 30-second intervals until melted. Keep stirring in between and let cool. - Separately, stir together coffee, espresso powder, and vanilla. - In a large bowl, beat softened cream cheese on medium-high speed until smooth. Reduce speed to low and beat in cocoa and remaining 1 cup sugar. Scrape down the side of the bowl occasionally. - Beat in coffee mixture. Increase speed to medium. Add eggs one at a time, beating well after each addition. Beat in melted chocolate just until mixed. - Pour batter into cooled Oreo crust and place springform pan onto a rimmed baking sheet. Bake on 325 F for 50 minutes. - Turn off oven after 50 minutes and prop open the oven door with a wooden spoon. Let cheesecake stand in oven for 1 hour. With a knife, loosen sides of cheesecake from pan. Refrigerate uncovered for 2 hours or up to 2 days. - Right before serving, microwave the remaining 2 ounces of chocolate on high for 30 seconds or just until melted. Drizzle over cheesecake and serve. *Note: This recipe is great for making the night before and stays well in the fridge for 2-3 days. I have to point out that this cheesecake is VERY rich and decadent, but the combination of coffee and chocolate is just perfect. Hope you guys enjoy it!
