Im about to make Eritrean food for the first time and after prepping the ingredients I realized that I have something even more important I have to do before I start. Apologize to my roommate. Dear Michael. I hope you understand that I made this dish in our home not only because I selfishly wanted to have home cooked eritrean food, but to also fulfill your Habesh christening which my uncle Abe initiated 6 years ago! All that is left is for you to smell of Eritrean food and you will be a full fledged Habesh brother :) But know this. After 4 hours of cooking 5 minced red onions and 2 table spoons of Berbere powder (and the rest of the ingredients) our apartment will never smell the same again. And no air freshener, scented candle or laundry detergent will ever help let alone get that smell out. I hope you can at least appreciate the results and the gesture and forgive the smell/curse that will forever stick to this place. Sincerely, Your roommate. p.s. I took the liberty of moving your coats into your bedroom like my mom and dad used to do for me when they cooked this dish....but it still wont help.
