Im not a vegetarian by any means, but I made a veggie chili this week and it was SO easy, healthy AND yummy. Heres the recipe. Sautee (in olive oil) one diced onion, two chopped carrots, two stalks of celery chopped, one chopped green bell pepper, one medium sweet potato, peeled and chopped and two cloves minced garlic. Let that cook a bit, then add 1 tablespoon ground cumin and 2 tablespoons chili seasoning. Cook that for a bit. Then add one large can of whole tomatoes (that you crush in your hands before adding), 2 small cans canilini beans (drained and rinsed) and one large box vegetable broth. Let this all simmer together until veggies are tender and enjoy. A perfect bowl of hot norishment for this chilly weather.
