Im not sure of when it happened, but over a decade ago I had what I can only describe as a switch flip in my head. I grew up with my mother working like a slave for days building up to a holiday meal. By the time it was ready she was exhausted, and although we were all very VERY happy with her meals, I dont know that she was able to enjoy the day. I inherited this need to make holidays PERFECT. The meal was supposed to be a certain thing, made a certain way. By the time I was finished, I was exhausted, and my poor family was so stressed that they couldnt have a good time. After all that hard work, I dont think there could be enough Ooohs and Ahhhhs in the world to let me know they loved it enough. After I went to school and became a professional chef, I was able to reduce a day of cooking down to about 2-3 hours. It helped me become more efficient, and I streamlined the entire process. The thing is that I decided the holidays werent about being PERFECT. The holidays are about enjoying yourself with friends and family. If you dont feel up to cooking a special feast, throw a pizza in the oven and have a good time. Whats for Christmas Dinner in my house tomorrow? Yesterday They asked me to make Tacos for Christmas, so we are having a Mexican menu! Breakfast: Chilaquiles Verdes with Fried Eggs! Dinner: Tacos, Beef Fajitas, Papas Con Chile (mexican mashed potatoes), and Camarones Al Mojo de Ajo (Shrimp with Garlic), Fresh Corn and Asparagus, and because I like it, Arroz con Azafran (saffron rice)! Of course we will also be having Pumpkin Pie! :) Celebrate the holidays! Have fun and dont waste a single moment being stressed and overwhelmed by the meal.
