In need of Wednesday dinner inspiration?? Why not whip up delicious Salmon with organic vanilla butter and asparagus :) An unusual but very welcoming dish. Vanilla we commonly associate with sweet things, but taste the vanilla seeds you scrape from the pod and you’ll find them a little bitter. Adding the vanilla to the salted Organic Dairy Farmers Butter only brings out the full vanilla flavour that sits surprisingly well with salmon. serves 2 2 tablespoons of Organic Dairy Farmers Salted Butter, softened 2 vanilla beans, split and scraped 2 x 150 portions of fresh Salmon, skin off a little olive oil 1 bunch asparagus lemon and green leaves to serve Mix the butter and vanilla well. In a non stick pan heat a little olive oil, season the surface of the salmon with fine sea salt. Once the pan is hot cook your salmon to your desired degree of doneness. You can do this in the pan by maintaining the heat or simply seal the salmon then place on a tray and finish cooking in a moderate oven. Salmon is best served under done than over. Blanch the asparagus, then quickly sauté in a little extra butter, season with sea salt and pepper. Place the asparagus on a serving plate and top with salmon. Smear a good amount of vanilla butter over the salmon and enjoy.
