In the summertime, we want to do as little cooking as possible, especially indoors! One tip is to get a package of chicken breast and grill them on a Sunday night outdoors to have in the fridge all week. Cold chicken is excellent for you and adds extra protein to whatever you are making. Whether its turned into chicken salad or sliced to reheat into quesadillas or sliced cold to toss in a salad. Here are some quick ideas to make a salad, a meal using grilled chicken! Fruity Salad- Not your typical mixed fruit tossed in a bowl, Fresh fruit is wonderful on your lettuce greens.Take 2 cups of assorted lettuce, top with 1/4 cup sliced strawberries, 1/8 cup manadarin oranges or 1 small clementine, 2 tbls crumbled goat cheese, 2 tbls dried cranberries and 2 tbls chow mein noodles for crunch. Top with sliced chicken for added protein. Dressing: Raspberry Balsamic- 1 cup balsamic vinegar, 1/2 cup olive oil and 1 tbls raspberry dip mix, 1 tbls honey. Shake and pour! Chinese Chicken Salad- Take the recipe above, minus the strawberries,dried cranberries and goat cheese. Keep the manadarin oranges, add 2 tbls sliced almonds, 1/2 cup shredded chinese cabbage and 1/2 cup carrot matchsticks. Dressing- Orange-Ginger Dressing- 1 cup balsamic vinegar, 1 tsp sesame seeds, 1 tbls ground ginger, 2 tbls dreamsicle pie mix and 1/8 cup sesame oil. shake and pour. So you can see our mixes, make excellent dressings. Make these ahead of time in a cruet and keep ready to pour at any time on your salads or use as a marinade.
