In the world of Fine Dining and Michelin stars, the Indian Kitchen is an outsider. Thanks to the British, Indian cuisine still is popular among foodies internationally. But then, what is Indian Cuisine? that’s the most difficult question to answer just like ‘what do you speak in India ?’. The so called Indian food seen outside the country is primarily the North Indian which is heavily influenced by the Central Asian flavors. But India has more to offer than this. South Indian cuisine is another broad classification comprising of 4 different styles representing the South Indian states. Due to its geographical isolation (The Western Ghats, Tropical Forests and Sea Coasts) and the cultural influences (Arabic, Portuguese, Syrian, Chinese and Tamil) the Kerala cuisine stands a class apart.
