Inspected Nov. 5 Lyndon Diner 1353 Kenneth Road, West Manchester Township 717-699-5523 • The person in charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. • Food which is time and temperature controlled for safety and which is held for more than 48 hours was not date marked. • Deeply scored cutting boards had not been resurfaced or discarded as required. • Old food and debris was in the bakery sink from the previous days business. • Several raw animal foods were stored above ready to eat foods in several areas. • An ice scoop handle was touching the ice. • Fifteen gallons of soup was not cooled from 135 degrees Fahrenheit to 70 degrees in 2 hours and/or from 135 degrees to 41 degrees within 6 hours after preparation. • One wiping cloth bucket had 0 parts per million sanitizer. • The surface temperature of dishes in the high temperature dish machine was 108 degrees, not 160 as required. • A box of single use items was stored on the basement floor. • Clean dish racks were stored on the floor in the dish area. • Hot water was not reaching 100 degrees at the back hand sink. • A small leak under the pre wash sink before the dish machine was causing pooled water. • There was a substantial water leak from pipes in the downstairs room where the water heater is. • No sign or poster was posted at the handwash sink in the front area to remind food employees to wash their hands. • There was excessive grease, dirt and debris on the floor under the grill.
