Is the place on fire? When we boil sap, we have to keep a keen eye out for fire. There have been many who have lost their maple syrup operation to fire...and this just happen to a local family. Fire is what you need to boil the water out of the sap so you are left with the 1- 5% sugar thats in it. When barometric pressure is right and we are stocking well, we can get a good boil going on (which produces lots of steam). When we do, our sugarshack looks like this (despite the pan cover directing it out the top vent) and when it does, we have to take a double take b/c it can look like we have fire inside. Thankfully it was just lots of steam this time.
