It very often happens that when a stall holder does very well he attracts the attention of ambitious wanna get quick rich opportunists usually young people or foreigners (ok from China) who cant speak the dialect. What the consumer (me) sees next is that the stall holder has been bought out or worse lost his lease as the opportunist has taken over the stall by paying more rent to oust the stallholder who has been there for years. *This has happened on more than two occasions.Once at Holland Village and again at coffeeshop in East Coast and again at other venues. I only noticed the change when I tasted the product. I should have been more observant as silly me the queues of regulars have magically disappeared and prices have gone up. Indeed the food has lost its soul it does not taste special or delicious anymore. Worse still, I paid more for the inferior dish to add insult to injury. I would have paid more. This is not my point. My point is some foreigners can come and take away the jobs of SIngaporean hawkers but they cannot duplicate the dishes. The taste is not the same anymore and Singaporeans can tell when tasting the authentic recipe from the copy. Bad enough the stall holders are a disappearing lot as their children are better educated and dont want to do the business which is hard work. Lets try to ensure we pay the premium to make it worth their while to stay in business. (even as I speak the scissor curry coffee shop house in Tiong Bahru has given up and from my last conversation with the food stall holder across him selling char siew and roast pork, high rent will force him out too. My point too.
