Italian expression 209: Mozzarella- fior di latte La vera mozzarella is originally from southern Italy (Campania, but also the areas of Latina and Foggia). It is traditionally made from Italian buffalo milk. If it is produced by processing cow milk (and sometimes an amount of buffalo milk) it is called Fior di latte . Mozzarella is difficult to use for pizzas, as it is too watery. So, they are usually prepared with fior di latte, unless the Mozzarella has been put in the fridge for at least 2 days. The term Mozzarella is wrongly used for several cheeses (formaggi) that are made by cutting chunks from a bigger block (from an antique Italian verb mozzare, which means to cut off). Those are not mozzarella! ah... by the way...Mozzarella is just Mozzarella: theres no need to say Mozzarella cheese :) Buona giornata
