Its a sweltering day. The oyster season begins at the weekend, when the native oyster will once again be available for us to guzzle in all its salty deliciousness. Im writing a feature on the Clarinbridge Oyster Festival and my first port of call today was the shore at Killeenaran, Co. Galway, where the Kelly family harvest the oysters. The tide was low and the workers put their backs into it until the tide turned, when the rising water forced them had to stop. After they went, I hung around for a few minutes to enjoy the silence. The tide rushed in, salmon leaped on the tide, seabirds whirled and swooped and something left a large wake as it cut quickly through the water. An otter, perhaps? Tomorrow: the workers preparing the harvest.
