Its going down tonight Oxtail Gumbo..The Recipe..1/3 canola oil, 4lb beef oxtails trimmed, kosher salt and pepper, 1lb pork Sausage, 3/4 cup Flour, 2tbsp Creole Seasoning, 1tsp crushed red chile flakes, 6 scallions minced, 4 Garlic Cloves minced, 1tbls ginger, 2 stalks celery minced, 1 large yellow onions minced, 1 smoked turkey neck, cut into 2 inch pieces, 8 cups chicken stock, Cooked Rice..Heat up 1 and a half tbsp oil in a 8 quart Dutch oven over medium heat. Season the oxtails with S&P. Cook until brown and fat is rendered, 15 to 20 mins then Transfer to plate, Cook Sausage til Brown 5-8 mins. Transfer to plate add remaining oil and sprinkle in Flour, make a dark Roux, add Creole seasoning, chile flakes, ginger, scallions, garlic, celery, and onions cook til soft about 12 mins. Add reserve meats, turkey neck, stock and salt; Boil. Reduce heat to medium, cook, covered skim fat as needed until oxtails are tender, for 3 hours. Uncover, cook until thickened, 40 minutes. Serve with Rice!#EatUp
