Its not your Bubbies Latkes…. With my tips for an easy, healthier twist. by Anja Weinberg, Thrive from Home, LLC 3 medium size potatoes 1 medium onion 1 clove of garlic 1 egg 1 teaspoon sea salt 1 cup of rolled oats So here is my “Make it Easy and Healthy” tip... I buy organic as much as possible... Why, you might ask? Well, I do like fact of no pesticides and I believe whole foods like that are better for you, and I love the fact that it helps me keep it simple :-) *Easy tip: Take your veggie brush and give the potatoes a good scrub with water -no need to peel. *Extra Health Tip: A lot of the nutrients and fibers are in and right under the skin -so leave it in. Peel the onion and garlic. Cut potatoes, onion, and garlic into chunks. Here is the *Make it Easy Tip: Put them into the food processor until finely ground (you might want to do it in batches, for even consistency). Now, does that sound a lot easier than the old fashion way of grinding them by hand... and your fingers and nails will thank you. I drain this mash just a little in a fine strainer. Put the mash into a bowl and add the egg, the salt and oats and mix it all together. *Healthier Tip: I like using oats instead of the traditional matzo flour, it gives it a nice crunch, good fiber and works even for Cousin Scottys gluten free diet :-). In a big pan, add a good amount (about 3/4) of vegetable oil. *Health Tip: Use a good quality oil that can tolerate high heat. The latke will not soak up as much oil. During the Hanukkah holiday, the oil also represents the oil in the temple lasting for 8 days and the richness of the season. In the old days, it stood for good fortune and prosperity. Make sure the oil is hot (medium high usually works great). With a large spoon, put a good amount of the mixture into the hot oil. Flatten it out to the desired thickness (I like them on the thin& crispy side). Fry golden brown on both sides. *Healthier Tip: When taking them out of the pan, put them on a few layers of paper towels. That way, excess oil can absorbed. After my first batch, Ill give them a try to see if salt, etc. needs adding. Serve with applesauce and/or sour cream. Enjoy. Happy Hanukkah. May your Blessings be Plentiful. Anja
