A Nordic Chef and clear inspirator to his fellow colleagues - situated in the absolute North of the old Kingdom - in Skagen - outside of the geographical reach of Michelin and étoile-accolade, still respected by his star-equals as the one profoundly thinking out of the box. What very few people in the country up North know, is Thorsten and I have known each other for almost 20 years, ever since he was a long-haired line cook and I a slim waiter apprentice in the outskirts, - no actually the very outskirts of Denmark. Its from these parts you get some of, if not the best, oysters in the world.
