Ive always pondered over this phenomena as a child. Deemed the Leidenfrost effect (after Johan Leidenfrost, a German doctor who first described it in the 18th century), is observed when a liquid such as water comes into contact with a surface substantially hotter (or thermally energetic) than the boiling point of the liquid. What results is a jacket of quickly expanding vapour at the contact point. As the vapour of most liquids is much more voluminous and incredibly less thermally conducting, the bead of fluid exists far longer than it would under lower temperatures.
