Ive used my recipe for the fruity muffins I shared with you last week to make a banana loaf. Ive added a few scoops of stevia to this one though. Beautiful with a light spread of butter (if you like). 4 medium bananas - mashed 1 egg 1/2 cup water 125 ml coconut oil (melted is best) 2 cups self raising wholemeal flour (or spelt flour) 1 teaspoon bicarb soda 2 1/4 teaspoon baking powder 3 scoops of stevia (pure stevia, not the mixed stuff. This will equate to less than 1/2 a teaspoon) Preheat oven to 180 degrees. Combine bananas, egg, 1/2 cup water and 125 ml coconut oil. Add sifted flour, bicarb soda and baking powder. Add any remaining husks from the sieve back into the mix. Pour into 2 lined loaf tins. Bake at 180 degrees for 20 -25 minutes Remember you can buy the coconut oil and stevia direct from me at the discounted prices. No need to pay retail.
