Jiffy Corn Casserole Preheat Oven to 350* 1 Can Whole Kernel Corn, (juice too) 1 Can Cream Style Corn 1 Cup Sour Cream 1/4 Cup Sugar 2 Eggs, Beaten 1/2 Butter Plus 2 Tbsp 1 8 Oz Box Jiffy Corn Muffin Mix 1 Cup Chopped Onion Salt and Pepper to taste Shredded Cheese, optional In small pan, sauté onions in 2 tbsp butter; set aside Mix all ingredients together, adding muffin mix last Pour in 13 x 9 pan and bake at 350* for 50 - 60 minutes The last 20 minutes of baking, add shredded cheese if wanted
