Joel cleaned out the zucchinis still left on the vine the other day. I finally got them sliced and frozen. I laid them out in single layers, with waxed paper covering each layer on baking sheets, then covered them with saran to freeze. Once they are frozen, then into zip lock bags they go, so they remain singular, and not frozen into a big brick of ice. I can take out a few or a lot depending on what Im using them for. Theyll be great to add to soups, and I also slice some very thin to use in lasagna, and moussaka.
