Just inserted the recipe for Mabel-Rella Stir Fry Chow Mien With Char Siu (叉燒炒麵): Recipe by Mabel-Rella Homemade Goodies Ingredients: • Fresh Chinese chow mien – X 3 balls (can be bought at Chinatown @ about USD$0.5 each) • Leftover meat on hand ( for example, char siu or any meat such as beef/ chicken) – about 1/3 cup • Cabbage or bean spout – 2 cups (or more if you prefer) • Garlic – X 2 gloves; minced. • Cooking oil – 3 TBPS divided (1 TBP & 2 TBPS) For Sauce (can be replaced with dashes of soy sauce and some water if you don’t have oyster sauce on hand): • Oyster sauce -- 1 TBP • Water – 1 TBP ====================== 1. Fan out chow mien in a bowl. Set aside. Do not wash chow mien since it will be too wet to stir fry. 2. Julienne (cut into thin slices) meat. Set aside. 3. Wash the vegetables and drain. Julienne cabbage if you use cabbage. 4. Combine oyster sauce and water. Mix well. Set aside. 5. Heat pan on high for 20 seconds. Pour 1 TBP oil onto hot pan. You will know when the oil is ready when you see tiny bubbles emerge. It should take about 10-15 seconds. Saute garlic for 5 seconds. 6. Add in meat and sauté for about 30 seconds. Remove meat and transfer to a plate. 7. Saute vegetables until tender. Stir well. It should take about a minute or 2. Remove vegetables and transfer to the plate where the sautéed meat is. 8. Pour 2 TBPS of cooking oil onto pan. Pour chow mien into pan when oil is hot. 9. Stir fry chow mien for a few seconds before add in meat and vegetables. 10. Add in oyster sauce mixture and mix well. Chow mien should taste a bit moist by now. If chow mien is still too dry, add in some water, 1 TBP at a time. 11. Serve with your favorite chili sauce.
