Just made the best homemade bolognaise, I would have taken a picture, but I ate it already -.- Next time though ;) Ingredients: 250g lamb mince 250g pork mince 1.5 tbsp tomato paste (diluted with red wine) 1/2 Onion (diced) 1.5 celery sticks (diced) 1 carrot (diced) 4 cups chicken stock (approx) olive oil 2 sprigs rosemary 2 bay leaves 1 cup red wine spaghetti Parmesan for topping ;) Method - Preheat your pan on a medium heat. - Give a good coating of olive oil on your pan and brown the pork and beef mince. Protip: Use a whisk to break up the mince easily ;) - Add the wine. And have a glass as well. Always drink the same wine your cooking with. Let simmer for a minute or so. - Add the onion, carrot,celery and diluted tomato paste. Stir through and leave for about 4 minutes. - Add the rosemary and bay leaves. Stir again and leave for about 3 minutes. So much herby smell :D - Add in your stock. Now 4 cups is an approx amount, you want about two fingers above the mince, so when you simmer it, it reduces and leaves a nice saucy sauce :). - Let it simmer on a med/low heat for about 45 minutes, uncovered. - Cook up your pasta just before your ready to serve, a bit of salt added to the water (of course). Protip2: Packet instructions will tell you a specific time, lets say 8 minutes for example. Knock off a minute, the pasta still cooks while your straining and fiddling around. - Add the pasta to the sauce, plate up and serve with grated parmesan on top :D
