Kale, cant say enough about this powerhouse, low calorie, high fiber, leafy, green vegetable. By now most everyone has heard of the health benefits of Kale, including being rich in vitamins, calcium, antioxidants, anti-inflammatory omega-3 fatty acids, and is great as a detox food for the liver. We use Kale in a wide variety of ways; tonight in particular I included fresh kale in a big, hearty pot of homemade soup. Recently, baby kale has become popular as a healthy salad addition.
