Kheer - this is the second of the four dishes that I had posted earlier. Sharing the recipe as well. Kheer Rice ½ cup Milk 1 lt Sugar 5-6 tsp or as per sweetness required Cardamom powder a couple of pinches Slivered Almonds Pistachios Sultanas Method: Soak rice in water for 4-5 hours. Take a heavy bottomed pan – boil milk and simmer on low heat until it reduces to half stirring continuously. There will be lumps of malai while doing this process – which you can smoothen by using a hand blender. Now add sugar as per sweetness required and add the soaked rice. Cook on low heat – do not cover it. If you feel the milk has reduced, add warm milk. Once the rice is cooked add cardamom powder and nuts. I like kheer in a slightly thick consistency but it can be altered by adding some milk as per requirement. Serve warm or chilled garnished with nuts.
