Kids love this recipe. I like to make the vegetables soft and melt the cheese by cooking the vegetable for 1-2 min, then adding chesse to the hot mix. Eating is made easier if the roti is made quite large (8 inches in diameter) and folded once at the bottom, and then folding it like a dosa. after that fold at the top. This makes a nice packet. It can even go in the tiffins. Cooked rajma, parboiled rice also tastes great when mixed with this mixture.
