Kielbasa Soup. INGREDIENTS: 3 medium russet potatoes (peeled and diced in small chunks) 1 TBS Olive Oil 1 medium onion diced 1 stalk celery diced in small pieces 1/2 carrot diced in small pieces 4 (10.75 oz) cans low sodium chicken broth 2 cloves garlic, minced 1 cup frozen corn 2 cans of cream of.... soup (ie mushroom, chicken, celery) 1 pound kielbasa (I used Turkey Kielbasa) sliced into 1/2 inch pieces 3 sprigs Thyme chopped fine Cheddar cheese for topping DIRECTIONS: In a large pot over medium heat, combine potatoes, and chicken broth Bring to a boil, then reduce heat and simmer until potatoes are tender, 15 minutes. Meanwhile, put the diced onion, carrots, and celery in a skillet with the olive oil and saute until tender. Add garlic and thyme. Cook 2-3 minutes, stirring constantly so garlic does not scorch. Add to pot of potatoes. Stir in sausage and condensed soup and continue to simmer until heated though (about 10 minutes or so) and slightly thickened. Season with pepper. Serve hot, topped with shredded cheese.
