Kombucha. At the risk of being labelled a hippy, I will tell you what I know about this amazing probiotic beverage and why I love it! Kombucha is made by brewing sweet tea for 7-10 days with a SCOBY (symbiotic colony of bacteria and yeast). The fermenting process transforms the tea into a slightly sweet effervescent refreshing drink that is just delicious. If youve ever had a vinegar-tasting kombucha, it was either over-fermented or the SCOBY was not healthy. This is not a drink I would be comfortable in buying from a shop as it is possible to get a contaminated batch, and there have been cases of illness and even death from bad batches, so be careful. There is very little scientific research yet, but in the last 2 years scientists have started investigating the worldwide claims of its health benefits, especially in boosting immunity (probiotics). To date I can only find good reports in the scientific literature. Anecdotally I hear positive stories all the time. And my family have barely had a days illness since introducing probiotic foods.
