Kurts Johnny Cash Veggie Burger recipe Ingedient: Taco Seasoning One largish Onion Red wine One Table spoon Tomato paste Garlic whole bulb One medium sized Yam Pecans one bag One package extra firm Tofu Flour One egg One Cup wine Mayo dijon mustard Jalapeno Havarti Cheese Lettuce Tomato 2 cups Chicken or vegetable stock Olive Oil 1st thing to do is get the the Garlic bulb in the oven roasting it should take about 20 minutes at 350. next lets deal with that yam cut it up into 4 even parts and grate up in the food processor (or by hand if you dont have a food processor) next break up the tofu by hand and mix also by hand with yam add in taco season and let sit for a moment until Garlic is done get 2 cups stock going on stove top and let boil down to 1/2 add in your red wine and 1 table spoon tomato paste reduce down to 1/2 again salt and pepper to taste slice 3/4 of the onion length wise (so you have rounds) now that garlic is done add garlic to tofu yam mixture the last 1/4 of the onion grate in with tofu yams and garlic chop up pecans add to yam mixture mix everything through thoroughly add 2 handfuls of flower and 1 egg mix through by hand once more Get a pan going on the stove med/high heat Olive oil in the pan and start adding the patties whole those are cooking start frying your onions in another pan get them caramelized and add your red wine reduction to the onions once the patties are done cooking watch them closely your looking for a nice deep brown and crsipy edges flip once and you should be good to go dress your burgers to taste I like Lettuce, Tomato, onion, dijon mustard and that Jalapeno Havarti
