LYBNs MEAL PLANNING Weekly Tip #2: Prepare, prepare, prepare Have you ever gone to the grocery store, bought lots of food with every intention of cooking all of that food, and then by the end of the week you’ve run out of time to cook all of that food, and it goes bad? Yes, it happens. But, the easiest way to make sure that doesn’t happen is to prepare. If I have a free half hour, I look at my weekly meal plan, look at the recipes, and decide what I can chop ahead of time. Then, I make time here and there to do it. My favorite time is after the kids go to bed, I turn up the music and chop away. If we are out of town or it’s a hectic weekend, I almost always look the night before my meal to see what I can chop or take out of the freezer after the kids go to bed. When it’s really busy or I’m not able to chop in advance, I get the kids involved in washing the veggies or spinning the salad while I chop, or I enlist my husband’s help. (Yes, after 10 years of marriage, he has figured out that work goes into these tasty meals and is very helpful chopping.) The list is endless as to what you can prepare in advance. Examples include: wash and de-rib kale; wash, chop, and spin all lettuce and make a big salad for the week; chop broccoli, carrots, onions, celery; peel and chop squash; cut grapes and strawberries for the kids lunches; and on and on. I don’t recommend slicing apples in advance unless you are going to sprinkle them with lemon juice (to limit browning), but even then I would only slice them 24 hrs in advance. I suggest storing chopped onions in a sealed container. The rest you can store in sandwich, quart, or gallon size bags. When you go to put your meal in the crockpot or make it when you get home from work (or leave instructions for a sitter), half the battle is conquered.
