Last Science of the day: Tried out the Bacon Experiment. Four subjects, two called it correctly which was actually smoked and which was the smoky salt. On the other hand, the batch in the smoker took an extra hour to get to temperature, and was a bit dryer in the end. People liked the texture of the oven-baked batch better, being tenderer. Please remind me in the future to rinse the cured meat better before cooking either way, this stuff is salty!
