Last night and this morning Beatriz was chopping and cooking and today she unveiled her surprise SANCOCHO for lunch with a chopped salad and a deep coffee. Sancocho has large pieces of two different potatoes, a chunk of yucca, the big green banana relative= plantains, and another, the fingerling Guineo banana. The broth is seasoned with a little salt and lots of garlic, cilantro of course, carrots and onions and in this case poor cuts of beef...you know, the flavorful cuts..Each serving gets a generous sampling of each of the root veggies and banana cousins and the meat. On the coast Fish Sancocho is common. Typically the Sancocho is cooked over wood fires in the street in front of the house in large cauldrons...well do that on Xmas day and maybe again at New Years.
