Last night, at 10 p.m., I made pasta. I was hungry because I worked late and skipped dinner. And besides, there were cold noodles in the fridge. So into a hot pan went a large glug of olive oil and some smashed cloves of garlic. And just as the garlic turned pale gold, my cold pasta hit the pan with a sizzle that made my mouth water. As the pasta heated up (I wanted some bits to crisp up a bit), I beat an egg with a generous pinch of salt and some grated cheese. Next, a large spoonful of cream managed to plop itself onto the pasta (there was an open box in the fridge and, okay, maybe it was more like two spoonfuls). I poured in the egg and cheese mixture and tossed it around a bit until the egg coated the noodles. That was it. A creamy mixture of egg and cheese— the pale yellow of a baby’s blanket—hugged my pasta. I confess, I ate it straight from the pan, but, at least, I wasn’t leaning over the kitchen sink!
