Last night for our 1 year anniversary, Camilla Price & I went to Belle (recently changed their name from Belle Diner) and had an amazing dinner. I stopped by earlier and asked Chef David to just make us something special and amazing for our anniversary - chefs choice & he absolutely did. Chef David is a magician or simply a culinary genius. He started us off with blackened green tomatoes with crab in a beurre sauce of some kind and a seafood salad kind of dish with tomato and avacado compote...I cant remember the exact name and ingredients, but they were both amazing flavors and textures. Then we had his version of chicken cordon bleu over his smoked grits with asparagus and spinach...and a ?wine? sauce that I dont remember the name of either - I was too overwhelmed with tastes to remember it all. Then dessert was a cheesecake slice with caramel and a chocolate cake slice of some new creation that they had just come up with that day & didnt even have a name yet. Both were fantastic. Honestly, I have been all over the world and had awesome food in many places + plus Ive tried dishes in most of the best restaurants in Memphis as well as a lot of the dives; as well as having many great chef friends that make fantastic dishes, but I swear Chef David has a talent that is absolutely a step above. I definitely have to figure out how to help nominate him for a James Beard Foundation award. If you havent tried Belle yet, you surely need to. And, yeah, check it out for your dinner Terry Johnson Sr. just tell him beforehand to have fun and make you something amazing.
