Leek and Broccoli soup with garlic croutons 2 leeks, white part (sliced) 1 broccoli 2 potatoes cubed 3 bacon rashers sliced into strips 1-2 cloves garlic, crushed 2 litres chicken stock 1/2 cup cream 1/2 cup grated gruyere cheese Garlic croutons 2 slices bread 30g butter 1 clove garlic crushed 1 tablespoon chopped fresh parsley Add all ingredients into slow cooker for 8-10 hours. When cooked blend or process until smooth. Return to pan, stir in cream, reheat without boiling. Serve with cheese and croutons Garlic croutons Remove crust from bread Cut into 1cm cubes Heat butter in small frying pan, add garlic parsley and bread, stir over medium heat until cubes are crisp and golden!
