Lone Star ticks have a sugar that also is found in red meat - and even some dairy products. Its usually fine when people encounter it through digestion, but a tick bite triggers an immune system response. The body perceives the sugar the tick transmitted as a foreign substance, and makes antibodies to it. That causes an allergic reaction the next time the person eats red meat, encountering the sugar. bit.ly/1zYI9dN
