Looking for a super healthy dinner? Heres a new recipe -- Im making it tonight: Chicken with Spinach Heat 1T olive oil in a skillet over a medium heat. Add boneless, skinless chicken breasts and/or thighs, 1 large sweet onion (chopped) and 2 cloves of garlic (chopped). Cook until chicken is slightly browned and onions and garlic are fragrant. Add 3/4 cup chicken broth, reduce heat, cook covered for 10 minutes or until the broth is reduced and chicken is no longer pink. Add 4 cups fresh spinach and another cup of chicken broth. Cover and cook just until spinach is steamed perfectly. Serve with lemon wedges. I like putting something orange on the plate with it - either cooked carrots or baked sweet potatoes!
